There are many books specifically for mediators themselves. The books below aim for a wider, more general, audience.

Singer. 1994. 
Settling Disputes: Conflict Resolution in Business, Families, and the Legal System

Offers a good history of alternative dispute resolution (George Washington had an arbitration clause in his will! and covers the motivation and results of various ADR methods in multiple realms of disputes.

Caffey. 2002.
Stay Out of Court! : The Small Business Owners Guide to Prevent or Resolve Disputes and Avoid Lawsuit Hell (Paperback)

This is a great book for a business person. He spends at least as much time on ways to avoid business conflicts in the first place as he does on methods for resolving them outside of a courtroom. Of course my favorite chapter is chapter 13 "Mediation - the Greatest Dispute Resolution Tool Ever Invented".
